Pasta salad with chicken and curry recipe

It is an undeniable fact that curry is a miraculous spice mix, to help bring out and combine with the taste of chicken; now here we add this succesful ingredient combination to our pasta salad recipe, and then we put in Dijon mustard and a few more ingredients which all combined will create a truly special blend.

* 1 lb. (500 g.) Rotini or short pasta of your choice,
* 1 lb. boneless chicken meat, already cooked
* 1/2 romaine lettuce head,
* 1 tablespoon Dijon mustard,
* 1 tablespoon balsamic vinegar,
* 5 tablespoons tablespoons olive oil,
* juice of half of a lemon,
* 1 teaspoon curry powder,
* 1 bunch chives,
* salt and pepper,
* lemon slices to garnish.

Cooking instructions:

1) Cook pasta in boiling salted water with one teaspoon olive oil, following package instructions as for the time it will take. Drain the pasta without rinsing it.

2) Meanwhile, cube the cooked chicken, the prepare a vinaigrette by mixing the mustard, lemon juice, vinegar and 5 tablespoons of olive oil. Add the curry.

3) In a big bowl, pour the pasta, the chicken, the vinaigrette and mix gently; allow everything to cool down once mixed. Adjust seasoning if desired.

Now we turn to preparing each individual bowls; line each bowl with lettuce leaves or shredded lettuce then ladle some chicken curry pasta salad over it. Sprinkle with the chopped chives and garnish with lemon slices.
