
This fettuccine with chicken and mushrooms is surprisingly easy to make, yet it definitely has a delicious and refined taste, worthy of special dinners. In any case this recipe will be a nice change from the usual tomato spaghetti sauces.
* 1 lb. fettuccine pasta
* 4 Chicken thighs or 3 chicken breasts
* 3 cloves garlic
* 1 lb. White Mushrooms, sliced
* 1 cup white wine
* 1/2 cup sour cream
* Parmesan
* 2 teaspoons tarragon
* 4 Little onions or shallots
* Freshly grated parmesan cheese when serving
1) Cut the chicken into strips. In a skillet, heat oil and fry the chicken strips over medium heat 3 minutes. Add the garlic and sliced mushrooms and cook 2 minutes.
2) Pour the wine in and cook so it reduces by about half. Mix in the cream, onions and tarragon. Cook to reduce the sauce so that it thickens. Sprinkle a pinch of salt over and check seasoning.
3) Meanwhile boil the Fettuccine pasta until they are al dente in a pot filled with salted water; rinse and drain thoroughly.
4) Pour the sauce over the pasta. Mix well to coat the pasta in the sauce.
Serve your chicken fettucine with mushrooms sauce with freshly grated Parmesan on the table.
