Homemade Chicken Curry Ravioli

We find a package of Wonton squares, thawed and ready to use, then this sets in motion our culinary imagination and things run wild! Let’s try something with curry, some peppers and inspire ourselves from an indian chicken curry recipe; let’s create something that is truly out of this world! And if I used this chicken to fill the Wonton squares and close them like ravioli, then prepare a sauce to cover them, to create this undeniable touch from India… Yes! We are on to something delicious here...

* 1-2 pack(s) small Wonton square wrappers or 40 sheets (you can find them in Asian grocery stores)
* 3 boneless skinless chicken breasts
* 1 onion, quartered
* 2 cloves of garlic
* 1-2 small chillies
* 1 bunch fresh cilantro
* juice of one lime
* 1 egg yolk
* 3 cups coconut milk
* 2 tablespoons curry powder, more if you like
* 1 teaspoon turmeric
* salt and pepper


1) First we start by preparing the chicken filling; peel the onion and garlic. In the bowl of your mixer, combine: the onion, cut into large cubes, garlic, chicken breasts, cilantro, chili (after having removed its seeds), lemon juice, salt and pepper. Blend everything to a paste, pour this chicken paste in a large bowl. Reserve.

2) Next, we turn to the preparation of the ravioli. Lay half the Wonton squares flat on a previously floured work surface. Beat the egg yolk in a bowl, with a little bit of water. Brush the edges of each square and place a tablespoon of the chicken stuffing paste at the center.

3) Cover them one by one from another sheet of Won Ton dough, making sure ther is no air trapped inside by carefully compressing air (be careful, do it gently because the wrappers will get stuck together very quickly). Then, using a pastry circle round, if possible, cut each ravioliin a round shape - purely for aesthetics... Once done, sprinkle with a little flour. Reserve.

4) Now we make the curry sauce; pour the coconut milk in a saucepan and mix in the curry and turmeric powder. Stir, add salt and pepper and let it reduce slightly on the stove.

5) At this point, we make the broth in which each you will cook the ravioli. Pour 6 cups of water in which you will add 2 tablespoons of powdered chicken stock. When the water starts to boil, put the ravioli in… Leave in boiling water for 4 minutes, then remove with a slotted spoon. Put the ravioli in a strainer to drain, then prepare each plate by dividing all ravolis among your guests and topping it with all the curry cream.

Serve immediately.
