Chicken and Tomatoes Pasta Salad

A slightly different and more complete pasta salad recipe, as this one uses chicken, a tasty ingredient that is not very frequently seen in pasta salads; yet this pasta salad will still have a light and refreshing taste...


* 1 lb. Short pasta of your favorite type (penne, rotini or fusilli)
* 4 skinless chicken thighs or 3 boneless skinless chicken breasts
* 12 cherry tomatoes
* 1 small jar of readymade sun dried tomatoes in olive oil
* Decent bunch of fresh basil (save a few intact leaves as garnish in the end)
* 3 tablespoons extra virgin olive oil
* Some fresh parmesan cheese, ready to grate as you are serving
* 1 cup of grated swiss cheese
* 3 cloves garlic
* Salt and pepper, to your taste

Cooking instructions:

1) Cut the chicken in small pieces and fry in a pan with a little bit of olive oil; season with salt and pepper as desired.

2) Cook pasta in boiling salted water and drain. Run them under cold water to keep from sticking.

3) Cut the dried tomatoes into pieces, slice the cherry tomatoes in quarters. Wash, then chop the basil.

4) Pour the cooled pasta, the chicken, cherry tomato quarters, basil, some of the oil from the sundried tomatoes and grated swiss cheese in a bowl.

Season with a drizzle of olive oil, then add salt and pepper to your taste and press in the three cloves of garlic. To finish, right at the time you will be serving this pasta salad, grate some fresh parmesan cheese on top, then garnish with basil leaves...
