Pork Costine on a bed of tagliatelle with diavolo sauce

A recipe for italian pork spareribs, served placed over tagliatelle pasta with a simple but tasty sauce which italians themselves call diavolo.


* 1 rack with 12 pork spareribs (the costine in italian)
* Extra virgin Olive oil
* 1 lemon
* 1 sprig of rosemary
* 3 cloves garlic
* water to boil the pasta
* Sea salt with herbs Gusto d'Italia
* Freshly ground pepper
* 1 bunch parsley
* 1 tablespoon white balsamic vinegar
* 1/2 lb. of tagliatelle pasta


1) Cut the ribs into 12 individual ribs;

2) Pour in a pan the 2 tablespoons olive oil, the juice from half the lemon, the rosemary, crushed 2 cloves garlic, water, salt and pepper; bring to a boil then reduce heat and make the spareribs boil for 40 minutes. Stir regularly.

3) Place the costines on a baking dish in the preheated oven at 350 ˚F until golden brown.

4) Meanwhile, let’s prepare the diabla sauce: chop the parsley and place in a small bowl, add a clove of minced garlic and remaining lemon juice, vinegar, salt, pepper and cover with 1 more tablespoon of olive oil. Stir well and reserve.

5) Cook your tagliatelle in a large pot with boiling water, until cooked aldente then drain. Once drained put the pasta back in your pot and gently mix with a drizzle little olive oil.

Putting this dish together, place some tagliatelle first, then top them with three pork spareribs, for each plate.

Pour your diabolo sauce on the perimeter and serve at once...
