A Farfalle pasta salad with smoked salmon

Smoked salmon is a delicious addition that goes very well in a pasta salad; here is a refreshing recipe that takes advantage of this, for a fancier pasta salad dish.


* 1/2 lb. Farfalle pasta (butterflies or bowties)
* 1/2 cup low fat ricotta cheese,
* 1/2 lb. diced smoked salmon
* 1/2 tablespoon capers
* 1 cucumber
* chives
* 1 tablespoon Dijon Mustard
* Olive oil, as desired
* 2 tablespoon balsamic vinegar

Cooking instructions:

1) Cook the pasta in boiling water as directed on the package, then drain and pour in large bowl. Drizzle with olive oil and mix. Peel the cucumber, slice them lenghtwise in quarters and remove their seeds, to finish dice the cucumber.

2) Mix half of the salmon with half the ricotta cheese,

3) In the bowl with the pasta, pour the salmon with ricotta mixture, the diced cucumber, capers, remaining diced salmon and some chives. Add remaining cheese and season to taste with the olive oil (amount to your taste), balsamic vinegar, Dijon mustard, salt (you shouldn’t need much, as smoked salmon is already salty) and pepper.
