Recipe for Linguine with a Ham and Mushrooms Sauce

A creamy and rich spaghetti sauce recipe married to some smoked ham with mushrooms served over linguine... Easy to make pasta dish, really, but delicious!

Ham mushrooms linguine

Ingredients (4 guests):

* 8 oz (227 g) mushrooms, sliced
* 6 slices smoked ham, very thick slices, diced
* 1/2 cup (125 ml) onion, finely chopped
* 1/4 cup (65 ml) Parmesan cheese, grated
* 4 tablespoons (60 mL) butter
* 4 tablespoons (45 mL) all-purpose flour
* 2 cups (500 ml) chicken broth
* 1 cup (250 ml) half-half cream
* 1/2 Teaspoon (2 mL) steak spice

* 1 lb. Linguine or spaghetti pasta,
* 3 garlic cloves, minced
* 4 Tablespoons olive oil

Cooking instructions:

1) Boil the pasta in salted water, until they are "al dente"; drain. Saute the garlic slightly in olive oil and toss with cooked pasta. Reserve.

2) Brown the mushrooms, make sure they are really browned. Put aside. In the same saucepan, cook the onions, reserve separately.

3) Melt butter or margarine in large skillet and make a roux, adding the flour and mixing with a whisk. Cook 20-30 seconds.

4) Add in the chicken broth and again mix well with a whisk, this will help avoid making any lumps.

5. Pour the cream over, mix the steak spices in, half the mushrooms, onion, ham, Parmesan cheese and simmer over medium / low heat about 10 minutes.

6) Mix together the sauce and pasta to coat the linguine or spaghetti well.

Prepare each plate, arranging the remaining mushrooms over each serving to garnish; serve.
