A Rich and Creamy Baked Spaghetti with Ham

What a great spaghetti recipe to help you take advantage of that piece of ham you have leftover from the night before; this recipe is quite rich and creamy however, so it's not seen as an everyday recipe but it does taste great; so great in fact I would actually buy the ham specifically for this spaghetti sauce and eat this recipe's ham leftovers the next day!

Ingredients: (Dinner for two)

Baked Spaghetti with ham
* 1/2 lb. spaghetti pasta (or your favorite long pasta type)
* 1 cup crème fraiche, or heavy cream
* 1 cup milk
* 2 to 3 thick slices of ham
* Grated cheese
* 1 onion
* 1 stalk green onions, sliced thinly
* 1 tablespoon flour
* Nutmeg
* pepper
* 1 clove garlic

Cooking instructions:

1) Dice the ham in small squares, then finely chop the onion. Fry the onion in a knob of butter (also adding a little bit of oil to avoid burning the butter). Meanwhile, set some water to boil over the stove.

2) Sprinkle one tablespoon of sifted flour on the onions, keep adding more flour until all the fat is absorbed by it. Reduce heat setting then gradually start adding the milk, always mixing well (preferably with a whisk) then add the cream. Mix again, sprinkle a little bit nutmeg in the sauce, then add a little bit of pepper. Meanwhile, when the pasta water starts to boil, put the spaghetti pasta in the water and boil for 8 minutes, or until al dente.

3) Add the ham to our white sauce, mix and press in the garlic and green onions; stir in the grated cheese: keep adding cheese until the white sauce mixture becomes slightly sticky. The pasta should be ready by now, drain it thoroughly.

4) Once the sauce and pasta are ready, pour both in a baking dish: first pour the pasta then pour the sauce over and gently mix. Generously sprinkle some grated cheese over, and broil using your oven's broil setting keeping a watchful eye not to burn the cheese.

Serve this white sauce baked ham spaghetti with small green salad on the side...
