The classic pasta salad with macaroni and mayonnaise

The classic pasta salad served at many restaurants and buffets, but I added a few vegetables and some chilies to give things some color. Since the main ingredient here in this pasta salad is mayonnaise, may I recommend that you make your own, for a better result and making mayonnaise is easy...


Macaroni with mayonnaise pasta salad
* 1 lb. Fusilli or macaroni pasta
* 3 Bell Peppers, small (1 green, 1 yellow, 1 red)
* 6 large tomatoes
* 3 shallots
* 3 small green chillies (more or less to taste)
* 1 cup mayonnaise, homemade or bought
* 1 tablespoon Dijon
* Salt and pepper
* Fresh chives
* Fresh thyme or other herbs

Cooking instructions:

1) Cook pasta in boiling salted water until al dente, then drain and allow to cool down.

2) Meanwhile, dice the peppers as finely as you can, slice the tomatoes in halves, empty their inside, then dice; mince the shallots.

3) Cut green chilies into small pieces; discard seeds and veins.

4) Prepare mayonnaise, if you choose to make your own (homemade is best of course).

5) Place in large bowl all the ingredients (pasta, vegetables, mayonnaise, Dijon, herbs), mix and chill for at least 2 hours before serving. You can always adjust the seasoning just before serving.
