Gemelli with Oyster mushrooms

A very tasty and creamy white sauce for pasta, based on oyster mushrooms, served over gemelli pasta.

Ingredients:

* 1 lb. short pasta
* 1 lb. and 1/2 oyster mushrooms
* 2 cloves garlic
* 2 stalks green onions, chopped in rings
* 6 sprigs of thyme
* 2 tablespoons butter
* 2 tablespoons flour
* 1 chicken bouillon cube
* 1 cup milk
* 1 cup water
* salt & pepper

Instructions:

1) Wash the oyster mushrooms, then cut into strips. Saute minced garlic in a little olive oil, add the chopped thyme. Add the mushrooms and fry for some time; their color will change and reduce in size by half. Just before the mushrooms are ready, add the chopped green onions and continue cooking until all vegetables are ready. Season with salt and pepper, reserve.

2) For the sauce, heat up the water and in it dilute the stock. In a saucepan, melt the butter, add flour and mix well, gradually pour the milk while stirring then add the broth to obtain a smooth and creamy sauce. Add the mushrooms and mix well.

3) Either pour the sauce over the pasta or you leave it up to your guests to help themselves...
