Soba noodle salad recipe with shrimp or vegetable

Here is a chilled pasta salad recipe, this time with an unmistakable asian twist with its special ingredients: ginger, soba noodles, soya beans and shrimp... this dish can be served as appetizer or even as main course.

Ingredients:

* 1/4 lb. soba noodles
* 8 white mushrooms
* 1/2 red bell pepper (green-yellow is good too)
* 1 carrot
* 1 cup shelled green soya beans (may be frozen)
* 12 big shrimps (frozen)
* 1 piece of ginger (1 inch)
* 1 clove of garlic
* 1/2 lime
* Black sesame seeds (optional)

For the sauce:
* 7 tablespoons japanese shoyu (tamari or low salt soya sauce)
* 1.5 tablespoon honey or sugar
* 2 tablespoons rice vinegar
* 1.5 tablespoon of sesame oil
* 1 dash of lime juice (more if you like sour like I do)
* Pepper
* sesame seeds (optional)
* Cayenne pepper (optional)

Instructions:

1) Prepare the sauce by pouring all ingredients in a bowl, then mix well and refrigerate. Remove 1 hour before the green beans and frozen shrimp. Heat water in a saucepan. Wash your mushrooms and dry on kitchen paper. Meanwhile pre-cut julienne carrots, red pepper strip. Chop into small pieces ginger and garlic. Put the soba in pan of hot water and boil 3 to 4 minutes. If necessary rinse the shrimp, and peel their skin completely.

2) In the meantime heat up a little vegetable oil in a pan to the stove. Sauté your shrimp for two minutes, with ginger and garlic. Then remove the shrimp and set them aside. You can remove the soba, lees rinse with cold water and set aside.

3) Leave the garlic and ginger in the pan. If necessary add more oil, add the carrots. Cook for 10 minutes. Prepare a paper towel on a plate. Pour the pan on the whole plate is to remove maximum oil. Finally, in a bowl put the soba and carrots and mix well so that carrots are found well everywhere.

4) You can set your plates: first some noodles, then carrots on a plate. A few soya beans, mushrooms, shrimp then season with the sauce. The final touch, sprinkle with black sesame seeds… et voilà!
