Another quick pasta recipe that is healthy, quick and inexpensive to make... No big fancy name to call it, but try it... its delicious!
Ingredients:
* 6 artichokes; fresh if available or frozen
* 1 cup of pilsner beer
* 1/4 pound of Roquefort cheese, or any real blue cheese
* 1 cup of liquid 15% cream
* 4 tablespoons of oil
* 1 garlic clove
* fresh blackpepper
* 2 cubes of Chicken broth
* 1 pound of cheese tortellini
Instructions:
I a large skillet, pour in the oil, followed by the pressed-in garlic clove.
If using forzen artichokes, drain well; perhaps leave them at least 30 minutes in the colander.
As soon as the garlic starts to brown a little, discard the larger chunks and fry slightly the artichokes
which will have been cut into quarters.
Sprinkle 2 turns of ground pepper and mix in the beer. Bring to a boil and allow to
simmer approximately 20 minutes under low heat setting.
Meanwhile, in another frying pan, and on low fire, slowly melt the Roquefort
cheese that was previously cut to bits.
Pour in the cream and mix slowly to avoid sticking. Mix until the cheese is completely melted.
To cook the pasta bring water to a boil in a pot and boil your tortellini as per package instructions or until 'al dente'.
Pour everything into a large bowl, mix gently the tortellini with the artichokes and the beer liquid.
Arrange it on individual plates by first putting in the tortellini with the artichokes, and them using a ladle, spread some cream and cheese sauce over everything.
Et voilà! Sprinkle a little bit of dried parsley or origano on top. Serve immediately.
