This is the mother of all sauces of french cuisine, bechamel sauce, you will find it in many recipes from french
gastronomie
and yes, unless you have done it many times, it is not easy to do. Unless you have the right
method.

to the rescue! Now with the microwave oven, it can be so easy! and it never misses. What more can you ask for?
2 tablespoons butter
2 tablespoons flour
1 cup milk (can be extended to 2-3)
1 quarter of an onion (peeled)
2 bay leaves
4 cloves
A pinch of nutmeg
Salt and pepper

Prepare the oignon clouté (nailed or cloved onion)
Take the peeled onion and drive the cloves into it through the bay leaves. This is now makes your onion clouté.
Pour the milk into the small skillet and put in the onion clouté. Gently heat until just before
the boiling point then turn off the heat
and allow the milk 5 minutes in order to infuse. After 5 minutes remove the
oignon
clouté and discard.

Make the roux
The second part to this recipe is to make the roux. To this effect, melt the butter in a pan and
mix in the flour.
Stir constantly with a wooden spoon over a low heat for 1-2 minutes to create a blond roux. Do not burn the butter or flour.

Add in the milk
Remove the pan from the heat. Gradually add the hot milk stirring constantly to blend it with the roux.

Simmer and stir
Bring to the boil, stirring all the time to avoid sticking. If you leave the sauce on the heat
alone
it will stick
to the bottom of the pan and burn. Lower the heat and let it simmer until the sauce reaches the desired thickness.

Season the sauce as desired
Season the sauce with a half teaspoon of nutmeg, salt and a few of turns of pepper
to taste. Strain the sauce
through the sieve into a bowl. Et voilà! Ready to use with whatever you had planned to!
2 tbsp (30 mL) regular butter
2 tbsp (15 g) white flour
1 cup (250 mL) milk
1/2 teaspoon
Nutmeg
Salt and freshly ground pepper, to taste
1.Place the butter in a microwave-safe bowl and cook for about 20 seconds on High, until melted.
2.Add the white flour and stir.
3.Cook on High for 30 seconds and add the milk all at once. Mix well.
4.Season with a bit of nutmeg, salt and pepper. Cook for another 3 minutes on High. Mix until smooth.
