2 tablespoons butter
2 tablespoons flour
1 cup milk (can be extended to 2-3)
1 quarter of an onion (peeled)
2 bay leaves
4 cloves
A pinch of nutmeg
Salt and pepper

1: Prepare the oignon clouté (nailed or cloved onion)
Take the peeled onion and drive the cloves into it through the bay leaves. This is now makes your onion clouté.
Pour the milk into the small skillet and put in the onion clouté. Gently heat until just before the boiling point then turn off the heat
and allow the milk 5 minutes in order to infuse. After 5 minutes remove the oignon clouté and discard.

2: Make the roux
The second part to this recipe is to make the roux.  To this effect, melt the butter in a pan and mix in the flour.
Stir constantly with a wooden spoon over a low heat for 1-2 minutes to create a blond roux. Do not burn the butter or flour.

3: Add in the milk
Remove the pan from the heat. Gradually add the hot milk stirring constantly to blend it with the roux.
