
The caramelized onions; another multipurpose cooking idea that can be used in many places. Just to give you a few ideas: caramelized onion dip, caramelized onion sauce, caramelized onion quiche, soupe à l'oignon... and the list goes on. Easy to do, and convenient; have fun!
3 average size onions
3 tablespoons extra virgin olive oil
half teaspoon of salt, pinch of freshly ground pepper
1: Chop the onions in thin slices. Thinner slices will cook faster;

Use a large skillet to heat up the olive oil, using medium heat setting. When the oil starts to
ripple, it is hot enough.
3: Place the onions in and
keep the heat to medium setting. Stir the onions in the hot oil.
4: Add the salt; this will create a chemical reaction where the water from the
onion will combine with the salt, accelerating the evaporation process.
5: Continue to mix the onions to avoid sticking. If left unattended they
will stick!
6: Watch the onions color gradually changing to brown. Mix for a few
minutes until they reach the desired thickness.
