Chicken and broccoli pasta

A healthy pasta recipe, and one that is also very easy to make. This one can also be customized in many different ways.


* 2 big broccoli heads (or the equivalent of from 8 to 10 cups) cut in small pieces
* 1 tablespoon of extra-virgin olive oil
* 1 pound boneless chicken breasts or thighs
* 1 pound of pasta type farfalle (that of bonds) or any other square pasta type, wholewheat flour pasta is preferred
* 1 red pepper in slits (or red chili in strips)
* 1/2 cup of Parmesan or grated Romano (or another cheese that could be grated)
* salt and pepper
* more grated parmesan cheese for serving


1 - In a large skillet pour the olive oil and the broccoli to be cooked. Cook for just two minutes; it should still be crisp
2 - Cut the chicken in small squares and start to cook them in that skillet with the broccoli; add more oil if necessary.
3 - add in the red pepper slits.
4 - cook until the chicken is well done.
5 - Next now we will boil our pasta:
6 - boil the pasta in water following the indications on the package
7 - when the pasta is ready reserve half a cup of the pasta's water and set aside. Discard the rest of the water.
8 - mix the pasta with the chicken and season with salt and pepper to your taste, add the cheese and mix well.
9 - add the half cup of water saved from the pasta boiling water.

Serve, and please leave some grated cheese on the table for your guests to help themselves if they wish...
