My friend Kerry has sent me his easy solution to a
healthy and good dinner, along with how it
looks like, for all of us to enjoy and benefit... Thank you Kerry you are a very good friend to me
Ingredients for pasta and salad:
1 pound spaghettini Pasta
Extra-virgin olive oil of good grade
8-10 Sundried tomatoes, marinated
2 cloves garlic
Parmesan cheese, to taste
Salt, freshly ground pepper, red chilli peppers
3 hearts roman lettuce salad
Homemade mayonnaise (or your favorite brand from the store)
Preparation:
I- The pasta
Use a small sauce pan,
Boil water with teaspoon of olive oil, add spaghettini, when boiling resumes, time for 8 minutes
in a large non stick pan add 1 tablespoon extra virgin olive oil at medium to high heat
add sun dried tomatoes about 8-10
add minced garlic about a level teaspoon
at this point while sizzling mix in strained pasta
add parsley a pinch of chile powder,
salt and pepper, to taste.
put serving in large bowl sprinkle with parmesan cheese and red chilli peppers,and pepper
II- The salad
Chop down the romane lettuce, clean well then strain
In a small bowl, mix extra virgin olive oil, your mayonnaise, pepper, parmesan cheese
Pour the mayo mixture over the salad
Et voilà bachelors healthy simple supper
Serves 2-4
