Ingredients:

(For 4 guests)

* 1 lb. of pasta, the type you picked
* 1 onion
* 1 carrot
* 1 stalk celery
* 1 lb. of peeled red tomatoes
* 1 lb. of Lamb meat
* 3/4 cup red wine
* 1 Red Peperoncino Italian Chile
* Salt
* Extra virgin olive Oil
* Parmesan or pecorino cheese

Cooking instructions:

1. Sauté the onion in oil, then add the celery, the carrot and red peperoncino, all finely chopped.

2. Add lamb meat coarsely chopped with a sharp knife. Sear it well, then mix in the wine, add the tomatoes and cover with a lid.

3. Simmer for one hour and season with salt.

4. Cook the pasta in boiling water, until it is "al dente". When ready to serve, divide each portion of pasta and ladle a generous amount of lamb sauce over.

5. Sprinkle with grated parmesan or pecorino cheese and serve.
