Pasta alla Lupara

Pasta alla Lupara refers to a rather spicy italian recipe; the word Lupara in italian language means "for the wolves" or Lupi, as it refers to a sicilian short shotgun, used to hunt them down. These lupara were introduced to the other continents with their presence in various mafia movies; apparently mafiosi preferred the lupara as their weapon of choice to settle their vendettas rather than to chase wolves! The range of the lupara is very short by design, and its main feature is: the lupara can't miss! The pasta meal that was named after this gun is a rather simple dish with a lot of bite revolving around pancetta, red hot chilies and parmesan cheese.

Penne alla Lupara
Penne alla Lupara... ready to eat!





Ingredients:

(For 4 guests)

- 1 lb. linguine pasta
- salt
- 1/2 cup oil
- two cloves of garlic,
- 1/2 lb. of pancetta, or bacon,
- Three hot red chili peppers, (Fresno, red jalapeno, etc...)
- freshly ground pepper
- one cup grated Parmesan.

Cooking instructions:

1- Bring salted water to a boil, and cook your pasta in it making them cook until al dente. Once the pasta is be ready, drain thoroughly and pour in the service plate you will be using for this meal and reserve.

2- Meanwhile, pour half the oil in a pan and bring it to heat; add in the two cloves of garlic, pressed in with a garlic press, and let them brown slightly.

3- Remove the garlic bits and put in its place the pancetta (or bacon) cut into strips. Sauté until it is well done. At this point add the red peppers (previously cut in halves, seeds discarded and finally cut into thin bits); if you do not have a red hot pepper you could also use the dry hot chili flakes, in which case it will take a few good pinches to replace the red chili peppers. Mix well and season with black pepper thoroughly; pour in the rest of the oil and pour this sauce over the pasta in the large service bowl.

4- Sprinkle with Parmesan cheese, mix well and serve your pasta alla lupara immediately.
