Macaroni and cheese in the smooth and thick cheese sauce

A good macaroni and cheese in a thick cheese sauce which will certainly please the kids.

1 pound of macaroni pasta or rotini,
1 box (1.5 cups or 385 ml) of Carnation evaporated Milk 2 %
2 cloves of (this one is optional) finely cut garlic
3 teaspoons white flour
1 teaspoon salt
1 teaspoon Dijon mustard
1/4 cup cream cheese, or more, to your taste
2 cups (500 ml) grated old cheddar cheese or monterey cheese
(optional) black pepper


Cook pasta according to package instructions.
Drain and reserve the pasta.
In a large enough saucepan, mix the evaporated milk with the flour, salt and Dijon mustard. When everything is well blended, mix in the cream cheese and keep stirring until the cream cheese is melted.
Keep stirring for 5 minutes or until mixture starts to boil and thickens, slightly.

Lower the heat setting and add the grated cheddar cheese by stirring it in until it is melted and blended in the sauce.
Once the sauce is smooth and homogenous, gently mix in the pasta in the cheese sauce and serve immediately.

Add spices so wanted. Yields enough for 6 youngsters or 4 adults.
