Kerry's Roasted Peppers Spaghetti Sauce

A great idea to combine the special taste of jarred roasted peppers, with sliced hot peppers (also jarred) with spaghetti and tomatoes! This spaghetti sauce started out as something simple, then became more refined as we were making it! Well, the important thing is the end result of course; and this recipe was different and delicious: this is why I feel compelled to share it with you on my site today...

* 1 lb. Spaghetti pasta
* 1 lb. Lean ground beef
* 5-6 Pickled red roasted peppers, chopped
* 8 pickled hot pepper rings
* Sliced fresh white mushrooms
* 2 garlic cloves
* 1 onion, chopped
* 1 can crushed tomatoes, drained
* 1 can spinach
* 1 teaspoon italian seasoning spice mix
* 2 tablespoons olive oil

Cooking instructions:

1) Empty the spinach from the can in a strainer and let them thoroughly drain, we will only need them last.

2) Meanwhile, using your favorite saucepan, heat up some oil and sauté the sliced mushrooms with the pressed garlic; fry them until they are well browned then reserve.

3) In the same saucepan, cook the beef in some oil, breaking it up as you cook it and pressing in more garlic immediately; when about half-way done put the onions in and cook for two more minutes.

4) Sprinkle the italian spices over the beef, then all the pickled peppers with about 4 tablespoons of the oil they were marinating in; continue cooking until the beef and the onions are cooked, then mix in the crushed tomatoes. Simmer for 10 minutes over low heat to reduce the sauce.

5) Boil the pasta in salted water, following package instructions or until "Al Dente"

6) At the last minute, pour the drained spinach in the sauce and mix; simmer a few more minutes, then pour the pasta in the sauce and gently mix; check seasoning and adjust with salt or italian spices if desired.

Serve this spaghetti with marinated peppers, placing the reserved fried mushrooms over the pasta on each plate, some nice crusty bread and some freshly grated parmesan cheese...
