Tagliatelle with Salmon in Vodka Sauce

The tagliatelle vodka pasta recipe with salmon would be a spaghetti sauce from an earlier period, it is one of those innovative recipes that were very trendy in the 70's, when vodka gave recipes a touch of class to so many stylish recipes, and salmon or lumpfish roe were the economic substitute for caviar. We suggest you prepare this for a themed dinner or even customize it however you would like...

(for 6 guests)
* 2 lb. fresh tagliatelle pasta
* 1.5 lb. Smoked salmon cut into strips (for this recipe you can use the clippings seen at a lower price)
* 3 cups cream
* 1 cup vodka
* 1 onion
* 1 tablespoon of butter
* Salt and pepper to taste
* A jar of lumpfish roe (red or black) - optional

Cooking instructions:

Peel the onion, chop it finely and cook over medium-low heat with the butter. Now pour in the cream and a pinch of pepper and heat thoroughly. Remove the sauce from the pan and place in a bowl, pour the vodka into the pan and use it to deglaze; cook to help evaporating the alcohol, then pour it all into the sauce.

Cook the pasta in salted water, drain in a large heated bowl.

Add the smoked salmon to the pasta, stir to heat it well, then pour over the hot vodka and cream sauce and mix again.

Complete by arranging some lumpfish roe over each individual plate if you choose to use them.
