A Spaghetti Sauce with Tofu


The tofu spaghetti sauce, where tofu has often been seen as the healthy choice... but does tofu taste good? Well truth is, it pretty much takes its taste after whatever surrounds it. So why not drop them in a spicy spaghetti sauce with tasty pasta wrapped around them? A nice combination of health and healthy taste!


Ingredients:

1 pound of spaghetti (or your favorite pasta)
2 tablespoons of extra-virgin olive oil
1 medium onion chopped finely
2 garlic cloves to be pressed in
1 celery stalk chopped to small slices
1 can (28 oz) of diced tomatoes
1 small can (5.5 oz) of tomato paste
1 diced green pepper
1 big carrot, in small dices
fresh white mushrooms
1 pound of regular tofu, in small cubes
salt and pepper to taste
some grated Pecorino Romano, to serve
basil, thyme, oregano to taste; whatever you like in a spaghetti sauce!

Cooking instructions:

* Chop your vegetables as desired, pepare the tofu
* In a saucepan, start cooking the bell peppers with the mushrooms in the olive oil under medium-high heat, for 3 minutes.
* Add in the celery, the carrot and the onion, press in the garlic and make sure that you put all the garlic in the sauce.
* Add the tomato can (not the paste) and simmer, covered if possible, under low heat for about 10 minutes.
* Mix in the tomato paste, stirring until the sauce is smooth.
* Add the tofu and seasoning, cover and simmer again for another 20 minutes. Mix only very gently so you do not break the tofu cubes.
* Boil your pasta to al dente level. If your sauce needs more water because it is now too thick use the pasta boiling water.
* Pour the sauce on your favourite pasta.
* Serve immediately,  allow your guests the leisure to sprinkle their own romano grated cheese over it.
