Some interesting interaction in the vodka sauce takes place as the alcohol evaporates
and leaves behind this incredible taste that incorporates itself in an unexpected way
with the cream and tomato sauce.


3 cups (1 liter) tomato sauce (base or marinara)
1 cup vodka
1/2 cup heavy cream, at room temperature
1/2 cup grated Parmesan
500g or 1 pound penne pasta

Cooking instructions:

Simmer the tomato sauce and vodka in a heavy large skillet over low heat until the mixture reduces by 25%,
stirring often, for about 20 minutes.
Pour the cream into the tomato and vodka sauce, stirring constantly.
Simmer the Vodka Sauce over low heat until the sauce is heated through.
Stir in the grated Parmesan cheese until melted and the sauce is smooth.

At the same time, cook the pasta in a large pot of boiling salted water until al dente,
as instructed on package or to your taste.
Drain the pasta and transfer it to the pan with the Vodka Sauce, and serve.

Serves 3 or 4
